Culinary Science course CUL-102 is Product Knowledge and Purchasing.

According to the published course description, "This course is an introduction to the identification and use of vegetables, fruits, herbs, nuts, grains, dry goods, prepared goods, dairy products, and spices in various forms. The student will identify, taste and explore each item with emphasis on local sustainability. In addition, he/she will evaluate products for taste, texture, smell, appearance, and other quality attributes. Food service purchasing, receiving, handling, storage, and issuing and evaluation processes are discussed and practiced. Purchasing automation, computerized purchasing and HACCP (Hazard Analysis Critical Control Points) systems are discussed and demonstrated in this course".
