An Environmental Science Capstone project looks at the types of coffee that are offered on the campus of Humboldt State University and attempts to raise awareness and campus procurement of organic, fair trade and sustainably produced coffee products. Document contains discussion and resources regarding issues surrounding coffee production and development of methods to raise awareness/ gain support for sustainable alternatives among the campus community.
