A brief description of the methodology used to track/inventory expenditures on animal products:

Luther's purchasing specialist went through invoices from local producers, as well as a breakdown of what was purchased from Sysco during the reporting period to determine our conventional and sustainable animal product numbers.

We offer diverse, complete-protein vegan options during lunch and dinner service through rice and beans, homemade Mediterranean vegan burgers, tofu, and seitan, but this is not a formalized policy.
