Does the institution use frying oil that does not include trans-fats and seek to avoid foods that include trans-fats in its dining operations?:
Yes

A brief description of the trans-fats avoidance program, policy, or practice:

NORTH CAMPUS
On North Campus, all frying oils used by University Dining Services are trans fat free. University Dining Services also seeks to avoid foods that include trans fats in its Lister Centre dining hall. Additionally, the Lister residential dining hall features a salad bar, fruit and entrée station and grill which focus on baked, not fried options. All salad oils and dressings are trans fat free, and 90 per cent of protein options are baked or grilled, not fried. ARAMARK has introduced a new program called “Get the Good Stuff” which focuses on healthy options and also includes nutritional labeling and educational information.

AUGUSTANA CAMPUS
The Augustana Campus cafeteria has four deep fryers that are used for fries and some meat products, and use No Trans Fat Canola Oil which is low in saturated fat, cholesterol free, high in vitamin E, and a source of omega 3.
