Stacy’s Buffet is located in Cole Hall at the Thompson School and offers a spectacular presentation of ethnic foods with flair. The buffet will be offered on select Thursdays from 12 noon – 1 pm by second-year Restaurant Management students during the fall 2009 semester. The Spring 2010 restaurant will feature American Regional and International Cuisine. Second-year restaurant management students are responsible for operating the restaurants, doing everything from developing the menus and running a food cost analysis to preparing and serving the food. Managers rotate weekly.

AAS 275 - Cooperative for Real Education in Agriculture Management (CREAM)
CREAM (Cooperative for Real Education in Agricultural Management) is a 2-semester course in which students perform the work and make the financial and management decisions associated with the CREAM dairy herd. Assumption of complete responsibility for the management and care of this 25-cow herd for the entire academic year. CREAM provides students with a unique experiential learning model that will help them understand how to work together to manage and operate a small business, the decision making skills required in production agriculture, and the application of science to the management of a dairy herd.

ACFI 650 - Wildcat Investment Fund
Students actively manage the Wildcat Fund, a donor-created fund which consists of cash and stocks. During weekly meetings, students present their stock selections to the group and debate the merits of the presented stocks. Trades are then made accordingly. An officer corps is responsible for structuring and coordinating the group.

The Organic Garden Club (OGC) is a student-run organization started in 2003 and operates a campus-community organic farm focused on promoting social, economic, and environmental sustainability. The OGC students host a weekly farmstand on Wednesdays, 11:00 AM - 2:00 PM at Murkland Courtyard where they sell fresh, organic produce to the local community. Within the OGC there are five officer positions: President, Vice President, Farm Manager, Business Manager, and Community Outreach Team.
