We count, record, and report our inventory every Monday. We have programs in place to ensure the use of our surplus. These items that utilize the surplus are then written into the cycle menu to automatically create a use for the extras from one menu item and planned for use for another menu item.

As the foodservice provider, we develop a plan with our partner to determine whether specifics are needed with our purchasing guidelines or if they prefer to mirror our standards. All of our vendor partners are aligned with our values, but we specifically track the level of purchases from our Farm Source and Forged Partner programs and are tracked in out Know Your Source report. We strive to maintain a goal of 20% of our purchases are from within 100 miles of the account, and/or are from a local family or independently owned artisan producers that align with our values.
